Apple doesn't want you to have access to the file system, and would much rather you did everything in the cloud rather than on the phone, so for the most part, the easiest way I've found to get files on to the phone is to email them to yourself when you have an app that can open them on the phone. Which is not good at all when it comes to doing a lot of file transfers.

I second jenett about having someone work through the accessibility settings.
