I put chunks of raw potatoes in a 425 degree F oven. An hour later, they were still raw. Half an hour after that, they were only partially cooked, while the other vegetables in the roasting pan were thoroughly cooked or overcooked.
I put chunks of partially-cooked (microwaved) potatoes in a 425 degree F oven. An hour later, still only partially cooked.
I diced a potato, sauteed it for about 10 minutes. Then I added a chopped onion and let it cook for another 15 minutes. I added egg and put it in the oven, discovered the potato bits were still mostly-raw, and posted.
Do you have an oven thermometer? I'm wondering if your oven isn't actually reaching the 425 that you've set it to. A lower temperature might cook other veggies but leave potatoes pretty much untouched.
